Southwestern Tofu Wraps (double recipe)
This recipe looks quick, easy and tasty. To ensure that we have enough food, I think we should make a double batch. Here are the ingredients (doubled):
8 tablespoons fresh lime juice – Dan
2 tablespoons vegetable oil
16 ounces firm tofu, drained, patted dry, crumbled – Dan
1 cup chopped red onion
2/3 cup chopped fresh cilantro
2 garlic cloves, minced
8 7- to 8-inch-diameter flour tortillas
4 cups thinly sliced lettuce leaves
2 cups spicy tomato salsa – Dan
Please sign up for some of the remaining ingredients or a beverage. I have water, soymilk, berry wine, and ingredients for making cosmopolitans.
