Vegetarian Cinnamon Chili

Cinnamon Chili

1 onion, chopped and browned in medium size pot (larger than large saucepan) or crockpot

Add to pot:

  • 2 cups concentrated vegetable stock – Dan
  • 1 large can tomato sauce – Dan
  • 20 oz. diced tomatoes, drained (try fire roasted tomatoes) – Dan
  • 1-2 cans black beans, drained and rinsed
  • 4-6 cloves garlic chopped – Dan
  • 2 teaspoons cumin
  • paprika
  • oregano

Cook for a while, then add to pot:

  • 1 bag of Morningstar Crumbles
  • salt and pepper to taste – Dan
  • cinnamon to taste – Dan
  • sugar, 1/8-1/4 cup? to taste – Dan

Simmer at least 1 hour for full flavor.

  • Wine – Dan

    Yeah, I’m trying to get ahead of the game, here. It was easier this time around because, when I went home for Christmas, I made this and knew we had to have it at a future SNDC. Hope to see you there!

    I can bring the beans, spices and Morningstar Crumbles.

    If a lot of people jump in, we might want to consider a double recipe. I nominate Dan (the only CEO present) to administer that decision.

    We could probably also use some sort of bread and/or some extra wine, juice or beer.

    Hm, I always assumed that to be a CEO, one had to be at the helm of a corporation, not a limited liability company. But, I guess you could call me president (maybe?)!

    Last time I made this dish it seemed like a lot, so maybe we should just plan to have another side dish rather than double the recipe.

    Ben and I could probably bring hummus and stuff to dip in it to munch on as we simmer. And I’ll bring cranberry juice, too.
