Cabbage Soup at Dan’s House

It’s still my turn to host since I didn’t really organize the Sauvie Island adventure last weekend. In response to Courtney’s list of ingredients, how about we make Cabbage Soup?
Soup
- 1 head green cabbage, finely shredded or chopped – Courtney
- 2 large onions, chopped – Courtney
- 16 to 28 ounces canned tomatoes (we’ll use fresh), chopped with juices – Courtney
- 2 green bell peppers, seeded and chopped
- celery stalks with leaves, chopped
- 6 carrots, peeled and sliced – Courtney
- 1/2 pound green beans, stem ends snapped, sliced on the diagonal – Courtney
- Black pepper to taste – Dan
- Chopped fresh herbs, such as parsley, sage, dill, cilantro, or thyme
Garnish
- Balsamic vinegar or lemon or lime juice – Dan
- Minced fresh herbs
- Chopped green onions
Rice – Dan
Wine – Dan

Looks great, Dan. I’ll bring some fresh cilantro, green onions, nonalcoholic beverages and backup wine. Plus some dried herbs for good measure.

I can get the celery and green peppers. I’m also planning to get some bread and cheese. I think that would be a nice complement to the soup. If someone else who hasn’t responded yet wants to get celery and green peppers, let me know, and I will just focus on bread and cheese.

Hey Brian, I was actually going to make rice to compliment the soup, but I suppose we could do bread instead. If you want to bring bread, I’ll bring the celery and green peppers and skip the rice.

Bread seems like it might be easier to take over to the park. Should I pick up some paper bowls to picnic from?

Yes, Brian, some bowels would be great! I’ll bring some regular spoons and such, since I don’t think it will be a big deal to carry those back. I’ll get some paper cups, however, since glasses would be more difficult to carry.
