Farmer’s market improv

We’ll go to the market tomorrow morning and see what looks good, then cook it. We’ll plan on vegetarian friendly but not vegan-friendly unless we hear otherwise.

Fresh Pesto July 3rd

Hey all, I’ll get some fresh basil from the farmer’s market and we can do pesto plus pasta. I think since Dan probably won’t make it due to his busy schedule, we’ll be safe to include Parmesan. If not or you are anti-pasta for some reason, please let me know in the comments. I’ll see if there are some squash or something similar that would make a good addition to the pasta and also keep an eye out for salad fixings.

Potluck at 924 NE 65th Ave, Noon, 3/12

Due to last minute planning, we are going to be a little more potluck than usual this week. We’ve got sweet potatoes to roast and mushrooms and bell peppers to put into wherever they might fit. If other people can bring something to contribute that they think might work well with those things, that would be good.
p.s. Don’t forget about the time change. Spring forward, so noon will feel like 11 AM!
Curry casserole

Brazilian Black Bean Stew

This is a vegetarian version of Brazil’s famous national dish, feijoada. The recipe is from Nava Atlas’s book Vegetarian Soups for All Seasons.
Ingredients:
- rice
- olive oil
- onion
- garlic
- sweet potatoes
- black beans
- red and yellow pepper
- diced tomatoes
- corn
- hot green chili
- cumin
- thyme
If people would like mango and cilantro for garnish, it will be available…I usually don’t put them in, cuz certain people here don’t like them.
We’ll have bread, as well as fixin’s for Oregon Chai (courtesy of Costco!). You’re welcome to bring any other drinks or side dishes as desired.
Waffle bar redux 5/23/2010 Noon

In celebration of being tired from Mike’s move, we are going to be lazy. We’ve got waffles and/or pancakes and some bacon (plus probably lots of left over chili!). If you want to make things fancier, bring something along and the fanciness level will invariably increase.
