Recipe Take 2: Scott Pilgrim Pie

How about a vegan shepherd’s pie? This recipe is in honor of my having found it in Scott Pilgrim vs. the World Vol. 2; you can find the original Scott Pilgrim recipe, if you so desire, here.
Here are the ingredients required:
* 4 large russet potatoes, diced
* 1/2 – 1 cup soymilk
* 1/2 teaspoon salt
* 1/2 cup water or vegetable stock
* 2 onions, chopped
* 1 large bell pepper, diced
* 2 carrots, sliced
* 2 celery stalks, sliced
* 1/2 pound (about 2 cups) mushrooms, sliced
* 1 15-ounce can chopped tomatoes
* 1 15-ounce can kidney beans, drained
* 1/2 teaspoon paprika
* 1/2 teaspoon black pepper
* 2 tablespoons low-sodium soy sauce
We’ll be making this without the mushrooms. I currently don’t have any of this stuff (except the spices), but I can get it. If you have anything, let me know.
Roy asked if we could move the time up a bit, so I’m hoping we can all meet at 1:30. Let me know if this will work…

Hey folks! We thought we might try something simple and yummy:
We’ll probably use this recipe or something similar. We can do the major cooking for that, here’s what you can bring:
fruit for fruit salad
side dishes (like muffins or bread?)
beverages

Ingredients:
3 medium red potatoes ELLERY
1 poblano pepper – Courtney
1 small red onion ELLERY
Gimme Lean meatless breakfast sausage – Dan
shredded vegan soy-cheese, cheddar flavored – Dan
1/2 teaspoon hot picante Mexican-style sauce
1 teaspoon freshly ground black pepper ELLERY
1 tablespoon freshly chopped oregano ELLERY
1 teaspoon kosher salt ELLERY
2+1 tablespoon grapeseed (or olive) oil ELLERY
7-8 8″ tortillas ELLERY
1/2 cup Cilantro (garnish) ELLERY
If anyone has a poblano pepper, a meatless sausage, soy cheese, or picante sauce, please let me know. Otherwise I’ll pick them up on Saturday.
